Is it guacamole?? Is it hummus??
Better.
It’s both.
Most of you are already aware of my tumultuous past with hummus. However, what I’ve now grown to love about hummus is its versatility. There are countless new flavors to experiment with and explore.
I’ve been playing around with a Mexican-inspired hummus using fresh cilantro and lime for awhile now. It’s always earned rave reviews from friends, but I still felt like something was missing.
Flash forward to me in the kitchen with a few avocados that needed to be used. I had planned on making fresh guacamole.
After all, you can’t go wrong with fresh guacamole.
But, a dear friend of mine had also been requesting that I post another hummus recipe for her to try ASAP.
You can see where this is going. The missing puzzle piece finally fell into place.
Instead of weighing my options and forcing myself to decide between the two, I took inspiration from the words of Joey Tribbiani: “Put your hands together!”
And, thus, Guacamole Hummus was born!
Was it just as nommy as it sounds??
Well, I’d have you ask my husband, but his face is still planted in the serving bowl, licking it clean…
Guacamole Hummus
Ingredients:
- 1 avocado, pitted and peeled
- 15 oz. can of chickpeas, drained and rinsed
- 2 T extra virgin olive oil
- 2 T creamy all-natural peanut butter (trust me!)
- 1 large lime, juiced
- 2 to 3 T jarred jalapeños, drained
- 4 T fresh cilantro leaves, coarsely chopped
- 3 cloves fresh garlic, peeled and coarsely chopped
- Sea salt, according to taste
- 1/4 tsp cumin
- Pinch of crushed red pepper
Combine all of the ingredients in a food processor and mix until smooth. Garnish with diced tomatoes and extra fresh cilantro, if desired.
