I am a sucker for all things waffles and pancakes. I just can’t resist them. And, contrary to popular belief, you can make them both super nommy and super healthy.
I should also mention that I’ve been on a serious coconut kick as of late. It’s so incredibly healthy, addictively nommy, and naturally sweet. So much in fact, that I didn’t even have to add any extra sweetener to the batter for these waffles.
To be honest, I thought about adding a tablespoon of raw honey…but, then the experimental chef in me thought: Let’s just see if I even miss it?
And I didn’t. Not one bit.
And neither did the hubby (aka, my guinea pig).
Not only is does coconut bring sweetness without added grams of sugar, but it is also loaded with fiber, a nice dose of protein, and healthy fats to keep you full and satisfied for hours.
What’s not to love?!
However, as much as I adore these waffles, I think the real star of this dish was what I put on top.

Coconut Flour Waffles
(Makes 6 waffles)
Ingredients:
- 6 eggs (Hello, protein!)
- 1/4 cup virgin coconut oil*, melted
- 1/2 T pure vanilla extract
- 1/4 cup coconut flour* (or make your own!)
- 1 tsp. cinnamon
- Sea salt, according to taste
- 1 T unsweetened cocoa powder, optional (I was in the mood for just a small hint of cocoa)
- 1 batch Warm Berry Syrup with Coconut Butter

In a large bowl, whisk together the eggs, coconut oil, and vanilla extract. In a separate bowl, combine the coconut flour, cinnamon, sea salt, and cocoa powder (if desired).
