Another summer trip — this time to California!
Guess what that means?!
Healthy snacks for on-the-go! 🙂
After falling in love with my Oatmeal Raisin Cookie Bars, I knew it was time to explore a new flavor.
And what better flavor than chocolate.
Actually, make that german chocolate!
These delicious nutrient-packed goodies kept me energized and sane while switching multiple time zones, lugging baggage, and rushing to meetings.
Plus, they are a breeze to make, which really comes in handy when you are also frantically rummaging through your wardrobe and packing last minute.
Not that I would know anything about that! 😉
Needless to say, whether you are faced with a hectic day, or you just want a yummy snack at home, these nommy bars have you covered!
German Chocolate Bars
(Yields 6 bars)
- 1 1/2 cups pitted dates
- 1/2 cup raw pecans
- 1/4 cup unsweetened coconut flakes
- 1/4 cup raw cacao nibs (or dark chocolate chips, if you prefer)
- 1/4 cup pure, unsweetened cocoa powder
- 1 tsp. pure vanilla extract
- Pinch of sea salt
Combine all of the ingredients in a food processor. Â Blend until smooth.
Place the mixture in zip-top baggies, or between two pieces of plastic wrap, and form into the shape of your choice — bars, squares, stars, hearts, bite-sized balls…you name it!
